HANOUMAKI for 2 persons (Eggplant with pork in the oven)
Ingredients: 1 big eggplant of Michekou, ¼ kilo Milo's pork, 1 green pepper, 1 carrot, 2 onions, 2 cloves of garlic, little cellar, fresh tomato, boukovo, salt & pepper.
We cut the eggplant into two pieces, we empty partially and we cook it in the oven. Next we stuff it with pork witch has been first roasted brown with the vegetables, tomato, pepper and put out with white wine. We add little feta cheese and we cook again in the oven.
LAMBKIN SOURTOUKIKO for 4 persons (Lambkin with spices and feta cheese)
Ingredients: 1 ½ kilo lambkin Chalaka, fresh local onions, fresh smelling dill of Milos, feta cheese - salt - pepper - olive oil.
In a pan we roast brown the onions, the dill, feta cheese. We have cut the lambkin in to 4 servings. We stuff in with the mixture, roll it up each serving in oilpaper and we cook in the oven for 2 hours.
