Originally from the Nantes region (France), we decided, after ten years spent as a special educational needed teacher for Marie-Astrid and as a chef in his own restaurant for Nicolas (restaurant la raffinerie), to leave this beautiful region and to settle in 2019, with our family, in Greece, on the island of Paros.
In 2020, we planted our first vines (1.4 Ha). These plots is guided in organic farming. We also rent few parcels of old vines in the mountains and we work with small farmers who are cultivating without pesticides, are working the soil with tiller and pickaxe. All the grapes that we vinify come exclusively from the island of Paros and are harvested manually.
The soil of Paros is varied regarding the bedrock (granite, gneiss and limestone/marble), the soils with a majority of sand can be more or less rich in iron. All our wines are vinified with indigenous yeasts and aged on lees. Our wines are unfined, unfiltered and were bottled in the spring. The estate's philosophy is to produce wines that are as close as possible to the terroir of Paros without inputs apart from the use of sulfur in a minimum dose.
