PARA…KOPOIS WINERY

Para…kopois winery was founded in 2018 by Petros Roussos in Parakopi, Syros, with ulterior purpose the production of high quality wines from the Cycladic varieties of Syros, Serifiotiko, Rhoditis and Kountoura, which are cultivated with love, good taste and the necessary labour,of course, as the name of the winery reveals, para…kopois.*

The founder and instigator of the winery, Petros Roussos, after his 15-year-old occupation with agriculture and viticulture, decided to consolidate his dream and his great love for wine in the place where he grew up, in Parakopi, Syros, at the foot of Gerousi hill, making there his own paradise in a small but modern wine factory with the vineyards near it.

There, at the foot of the hill, 18 square metres of vineyards stretch, where natural beauty and calmness prevail. Lentisks, osiers, thymes and sages girdle the vineyards, where the noble varieties of grapes and those particular vineyards knit together to offer rose and white wines with composite fruity taste. The selection of these varieties took place after the climate and ground of the area was profoundly studied.

OUR PHILOSOPHY

The philosophy of the winery is, always respecting the pioneers, to transubstantiate tradition and put into practice the most modern methods in wine-making.

Many people, seeing Syros on board the ship, wonder what this barren island produces. However, this barren island gives produce of amazingly high quality, such as thyme honey, unique dairy products, vegetables, sweet-smelling herbs, olive oil and many more. Syros, the Capital of Cyclades, except for its rich cultural heritage, has also got great gastronomic wealth. Therefore, with faith and love to the land of Syros, para…kopois winery creates its first two wines, with the contribution of the enologist Elias Roussakis, and with material the fresh and promising grapes of Syros. And the name of these first two wines nissou methi.** This name comes from the wine-maker’s conviction that Syros island can carry us away not only with its scenery and beauty but also with its sweet smells and tastes.

*Para…kopois is a pun on the name of the winery and the name of the location the                                    winery is in, Parakopi.
  Also, kopos in Greek means labour, here the effort it takes wine to be produced.

The wine-maker’s commitment through his work, knowledge and passion for creation allows the wines to reveal the feeling and uniqueness of this magical place.

Among immediate plans is the creation of a place where the visitor will be able to discover the world of wine. To visit the vineyards, to learn about viticulture and then to see the wine-making procedure from the beginning to the end. A place where the visitor will get to know all levels of wine-making and taste the wine accompanied with various local dishes, of course.

Nissou methi, Dry White Certified Varietal Wine

Serifiotiko-Rhotidis, 13,5 vol

A refreshing wine of lemon colour with prevailing aromas of unripe citrus and pear, as well as ozone and wet rock. A wine of intense aromas, medium body and high acidity with a pleasant finish of medium duration. It perfectly accompanies fish, poultry, lemon sauces and white cheese.

Nissou Methi, Dry Rose Certified Varietal Wine

Serifiotiko-Kountoura, 12,5 vol

Its main characteristics are the exhilarating cherry with orange glows colour, as well as the strawberry, apricot, violet and ripe lemon aromas. A rich character with a light body, high but not sharp acidity with the presence of ripe fruit and a pleasant finish. It wonderfully accompanies summer pasta, poultry and salads.
